Spicy Pineapple Fritters
Ingredients
- 1 habanero or 2 jalapeno peppers, minced
- 2 cups pineapple chunks
- 3 chives, finely minced
- 2 cloves garlic, minced
- 1/2 teaspoon tumeric
- 1 1/4 cups flour
- 1/2 cup milk
- 1/2 cup extra ****** olive oil
- 2 eggs
- In a large mixing bowl, combine peppers, pineapple, chives, garlic, and tumeric. Mix well.
- In a separate bowl, combine milk, eggs and flour. Mix thoroughly.
- Cover each bowl and refrigerate 4 hours.
- Remove and combine batter with fruit.
- In a large frying pan, heat olive oil.
- Spoon batter into oil and fry4-6 minutes, or until golden brown.
- Remove spice fritters and allow to cool.
- Serve!
